Course Description

This course is designed to provide you with the knowledge and basic skills on NVQ level 1 and to prepare you for either progression towards NVQ level 2 or a job in the industry. The course is structured to deliver the basic skills of professional cookery within the catering industry, this will include Maths, English and ICT integrated in the course as these are fundamental basics for a chef when following recipes and taking orders. You will also work on personal and social skills through out the year You will develop your skill through weekly productions in the Waterfront Restaurant.

Course Structure

The course is made up of 6 units, of which 3 are mandatory. Areas covered by the course include:

  • Health and food safety
  • Teamwork
  • Prepare and cook Meat and poultry
  • Prepare and cook Vegetables
  • Prepare and cook Bread and Dough

Course Assessment

The course is assessed through a portfolio, which will include practical assessments, questions and answers, workbooks and evidence collected on work placement.

Entry Requirements

  • No entry requirements necessary
  • A good passion and enthusiasm for food will be needed
  • All applicants must complete an initial assessment in Maths and English and attend an interview
  • It is suggested that successful candidates enrolling onto this course have, or try to gain part time employment within the hospitality industry

Course Progression Routes

Completion of the NVQ Level 1 Preparation and cookery is acceptable for progression to NVQ level 2 or 7100-02

Course Career Prospects

This qualification will provide opportunities to gain employment serving food and drink to customers in the hospitality industry in positions such as junior commis chef and trainee positions within hotels, cafes and restaurants.

Enrichment

Activities such as trips and visits will be arranged, which are beneficial to this course and your learning. These activities are optional and additional fees will be charged to you. Details will be provided at the time of interview.

 

During your year at college you will have the opportunity to access various enrichment activities such as visits out into the industry, trips abroad, day trips within the UK and working on special events. You will also have the opportunity to complete a work placement within the Hospitality and Catering Industry.

Course Costs

There are no course fees if you are under 19 years old. However, you may have to pay for textbooks, personal kits, uniforms, trips and personal stationery. You will be informed of these at your interview.
