Food Safety in Catering CIEH Level 2 Award

Course Description

This qualification replaces the CIEH Basic Food Hygiene.

Food Hygiene regulations require all food handlers to be supervised and instructed and/or trained in food hygiene matters. This course is suitable for anyone working in a catering or hospitality setting where food is stored, prepared, cooked and served. Typical environments may include:

• Pubs
• Hotels
• Restaurants
• Retail
• Contract catering
• Fast-food outlets
• Hospitals
• Care and nursing homes
• Schools
• Prisons
• Armed forces

Course Structure

The course includes:

• Legislation

• Food safety hazards

• Temperature control

• Refrigeration, chilling and cold holding

• Cooking, hot holding and reheating

• Food handling

• Principles of safe food storage

• Cleaning

• Food premises and equipment

Employees who handle food will gain a firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved.

They will have the confidence and expertise to deliver quality food safely to customers. This qualification needs updating at least every 3 years.

Entry Requirements

An interest in handling food hygienically and safely for customers is required for this course. Candidates are required to bring Photo ID in order that they may take the exam. This can either be a Passport or a Driving Licence.

• Intermediate Hygiene
• Advanced Hygiene
• All kitchen and restaurant NVQ’s from Entry Level to Level 3

Course Career Prospects

This award will improve employment opportunities in catering or hospitality settings including restaurants, schools, hospitals, care and nursing homes. Food hygiene regulations require that all food handlers should be trained in food hygiene.
