Victoria Sponge Mix
You will need:
250g Margarine/butter
250g Caster Sugar
5 Eggs Medium
250g Plain Flour
12g Baking Powder
Method:
Cream the sugar and margarine/butter in a bowl until fluffy and almost white.
Gradually add the beaten eggs, mixing vigorously.
Sieve the flour and the baking powder together.
Gradually incorporate the flour into the mixture as lightly as possible.
Lightly grease and flour two 18 cm sponge tins.
Place the mix into the prepared tins.
Bake at 190-2000C (Gas 5-6; 375-4000F) for 12-15 min.
Turn out of the tins onto a wire rack.
When cooled spread one half with jam, place the other half on top and dust with icing sugar.
Portion and serve.
