Course Overview

To complete this course you will work in the kitchens, preparing and cooking dishes for the Waterfront restaurant for Lunch, Dinner and other events and also through attending skills lessons.  You will be required to complete assignments, knowledge tests and an on-line food safety level 2 test (if you have not already acheived this). You will also sit several skills tests through the year and two final tests to assess your culinary skills.

Units and Structure

To complete this course you will work in the kitchens, preparing and cooking dishes for the Waterfront restaurant for Lunch, Dinner and other events and also through attending skills lessons.  You will be required to complete assignments, knowledge tests and an on-line food safety level 2 test (if you have not already achieved this). You will also sit several skills tests through the year and two final tests to assess your culinary skills

You will develop your skills in the following areas of Larder and Patisserie

Advanced Skills in Larder include:

  • Skills and techniques in producing Vegetable and vegetarian dishes
  • Skills and techniques in producing meat dishes
  • Skills and techniques in producing Poultry and Game
  • Skills and techniques in producing fish and shellfish

Advanced Skills in Patisserie and Bakery

  • Produce fermented dough and batters
  • Produce Petit fours
  • Produce pastry
  • Produce hot, cold and frozen desserts
  • Produce biscuits, cakes and sponges

All these areas will be covered in great depth typical of a level 3 qualification. Alongside the practical skills you will also be required to research and develop assignment work for necessary core knowledge of the Hospitality and Catering industry

  • Supervisory skills in the Catering and Hospitality Industry
  • Supervising Food Safety
  • Practical Gastronomy
  • Food Product Development

Entry Requirements

You'll need to have:

  • City & Guilds Professional Cookery Level 2 Diploma or
  • NVQ Level 2 in Food Preparation
  • Relevant Industrial Experience in an establishment of a respectable level is desirable
  • GCSE Maths and English grade C or 4 and above
  • All applicants must complete an initial assessment in Maths and English and attend an interview

I have worked in kitchens since I was 17; I trained at Rotherham College for three years and successfully completed a Food Science and Nutrition Degree at Sheffield Hallam University. My love for catering came when I realised that the catering industry has no limits to creativity and learning and as a result of this my cooking style is very modern, I use many molecular techniques and modern equipment to give food a ‘wow’ factor to the customers.

I am passionate about passing these skills on to the next generation of chefs and continuing to learn more skills and techniques to share with the learners.

Successful completion of this qualification will enable you to further your studies at university at Level 4 and above.

Employment Opportunities

This Qualification will provide opportunities to gain employment preparing and cooking food for customers in the hospitality industry in positions such as a Commis Chef and positions within hotels, cafes and restaurants with a starting salary of £14,000.
