Course Overview


You will work as part of our dynamic team, working in an AA accredited restaurant.

You will be required to work a minimum of 6 theme nights throughout the year as these will contribute towards the assessment of your practical examinations.

Units and Structure

To complete this course you will work in the kitchens, preparing and cooking a wide variety of complex dishes.

You will develop your skills in the following areas:

  • Profession Kitchen Skills
  • Menu Planning
  • Prepare cook and finish yeast products
  • Prepare cook and finish vegetables and salads
  • Prepare cook and finish terrine dishes
  • Prepare cook and finish stocks, sauces and dressings
  • Prepare cook and finish soups
  • Prepare cook and finish pastries, desserts and confectionery
  • Prepare cook and finish meat poultry and game
  • Prepare cook and finish fish and shell fish
  • Prepare cook and finish hors d’oeuvres, cocktails and canapés
  • Prepare cook and finish farinaceous dishes

Assessment will be carried out with practical exams, assignments and projects, all units are graded as pass, merit or distinction and all need to be passed to complete the qualification.

Entry Requirements

You'll need to have:

  • You must be 18 years or above to apply for this course and have a Level 3 catering qualification or significant industry experience which may be considered as an alternative
  • GCSE Maths and English grade C or 4 and above
  • All applicants must complete an initial assessment in Maths and English and attend an interview

Chris Waddington

I have worked in kitchens since I was 17; I trained at Rotherham College for three years and successfully completed a Food Science and Nutrition Degree at Sheffield Hallam University. My love for catering came when I realised that the catering industry has no limits to creativity and learning and as a result of this my cooking style is very modern, I use many molecular techniques and modern equipment to give food a ‘wow’ factor to the customers.

I am passionate about passing these skills on to the next generation of chefs and continuing to learn more skills and techniques to share with the learners.

Progression and Employment

Successful completion of this qualification will enable you to further your studies at Level 5 and above at university  or CTH accredited colleges around the world.

This Qualification will provide opportunities to gain employment preparing and cooking food for customers in the hospitality industry in positions such as a  Chef De Partie/Junior Sous Chef and with a starting salary of £18,000.
